伟瀚家乡菜 (EP 5) – 潮州卤鸭 | Teochew Braised Duck


Hi everyone, I am Wei Han. Welcome to Wei Han Home Cook Channel. You may call me Wei Han, Sifu, Jeff Law, You may call me ‘Chok De’ Law. Today we are going to present to you Braised Duck. The ingredients are as follows: Braised Duck Firstly we have Cinnamon Sticks Star Anise Clove 5 – 6 cloves are sufficient for one whole duck Too much of cloves will ruin the taste Next, we need Galangal Cut Galangal into cubes for flavour enhancement Separate 2 whole bulbs of Garlic into cloves without peeling Five Spices Powder 5 Tablespoon Dark Soy Sauce for colouring purpose 8 Tablespoon Soy Sauce Sufficient Chicken Stock Chicken stock is an optional ingredient Usage of Chicken Stock is able to boost the dish’s flavour to a higher level Not sure how to prepare chicken stock? You may refer to my previous episode on how to prepare simple yet flavorsome chicken stock Aaaaa… now it’s time for today’s highlight 1 whole Duck! Since we are braising duck so why not fully utilize for other ingredients as well What else can we braise? Hard Boiled Egg Raw Peanuts And Fried Dougan Duck has its own exquisite milder flavour So its best if we process it before cooking How to process? We can use salt to reduce the strong duck flavour Now, add some salt onto the duck pieces Gently rub the salt all over the duck Make sure you rub it evenly including the inner part and bone area Ok! Once done, leave it for 30 minutes After that we can wash away the salt and fully cleanse the duck with water After 30 minutes… Ok, 30 minutes has passed So its time for duck bathing=) Make sure you prepare water And wash thoroughly Gently squeeze to remove excess water Alright, we are now ready to start our duck braising~ Done washing, now we need to marinade the duck How to marinade? Very simple, all we need is Five Spices Powder Again, make sure the powder is distributed evenly onto the duck pieces Just rub it on gently Add on some more till it is fully covered I cut the duck into quarterly pieces Because of my pot’s size If you have a bigger pot at home, You can choose to braise the whole duck without cutting Ensure the five spice powder is coated evenly inside out Marinade the duck for at least 1 hour We will be back after this to start our braising dish After 1 hour… To start, let’s heat up the pot Once heated, add in oil Let the oil heat up Once heated, we can now add in the ingredients Galangal Fry till fragrant Garlic Cloves Fry a bit till fragrant before adding in other ingredients When you start smell the garlic cloves It’s time to add in the dry spices Star anise Cinnamon sticks Cloves Continue to fry till fragrant Next, add in chicken stock This is the chicken stock that we have introduced earlier on Now, add in thick soy sauce Soy sauce Stir evenly Turn to high heat Put on the pot lid and let it bring to a boil After 30 minutes… Ok, its now boiled It’s time to put in the duck These are the marinated duck pieces Add in water till the duck is submerged This level should be sufficient Now, cover the lid And turn to low heat Let it braise for 1 -2 hours After 30 minutes… Ok, we can add in our side diches after the first 30 minutes Which we have eggs and dougan Put in the hard boiled eggs Next, will be the fried dougan Let it submerge partially as well Put on the lid and braise for at least another 1 hour After 1 hour… Wow.. 1.5 hour has passed Lets take a look on our braised dishes Waaaaa.. The colour looks so appealing Now, you can use palm sugar to enhance the flavour You may opt to use palm sugar or white sugar Both of them works just as amazing After inserting palm sugar Put on the lid and braise for at least another 30 minutes Then our braised dishes is ready to be served After 30 minutes… Wah! 30 minutes has passed. Lets take a look at the final product Smells and looks so wonderful Even the texture is just right So now its time to turn off heat and our braised dishes is ready to be served Before that, don’t forget that we still have another side dish Peanuts! Can make use of the braised gravy to double braise the peanuts To braise peanut is very simple Put both raw peanuts and sufficient braised gravy into a saucepan The peanuts must be fully submerged in the gravy Then cover the lid and braise with low heat for 2 – 3 hours by then the peanuts will tender enough to consume Smells and taste even better! Finally after 3 hours Lets check on our braised peanuts The texture is just right! If you are wondering why is the gravy not dried up even after 3 hours It’s because i will check on this every now and then to add in some gravy before it dries up Continue to add on till the peanut becomes soft enough to consume And when its tender enough, braised peanuts are ready to be served Finally our appetizing braised dishes is now successfully done!
