Wrap the tofu in paper towels to drain. After 5 minutes…. Replace the wet paper towels for the new paper towels, and drain for a while. Wash the 1 japanese leek quickly, and cut into diagonal pieces. Cut the 3 “eryngii” into bite-sized pieces. Stir-fry the eryngii and leeks lightly in a skillet with heated vegetable oil. Then add the cut beef,… and season with 2 tbsp sake, 1.5 tbsp sugar, and 1.5 tbsp soy sauce. Then cut the drained tofu into bite-sized pieces, and add. To finish, cover the skillet, and cook for about 10 minutes. It’s done.
