Hi, I’m Mama Jin! Today, we’re going to make a recipe that was requested via comment, sweet and salty soy sauce braised potatoes.
It’s my mom’s recipe! Here are the ingredients. Wash the potatoes and peel off the skin with the veggie peeler. And cut the potatoes in medium chunks. Quarter a potato first, and then cut it again into 3 parts. If you use a small pot for braising the potatoes, they won’t get the sauce evenly and the color won’t look uniform. Get a big pot that has a wide bottom
and put the potatoes in, add 2T veggie oil and 2T corn syrup. Turn on the heat and stir the potatoes in high heat for 2-3 minutes. After about 3 minutes, the outer surface of the potatoes will look slightly opaque since it’s getting cooked. In the same pot, add 1cup water, 2T soy sauce,
and ½T sugar, and stir well. Braise the potatoes for 6-7 minutes. Gently stir the pot around 5-minute mark. It’s been about 7minutes since we start braising the potatoes. Turn the heat off, sprinkle 1/2T sesame seeds and add 1/2T sesame oil. Put the lid on and leave it for a minute to steam it. Isn’t this soy sauce braised potato recipe so easy? Have you had trouble with overcooking potatoes and they lost their shape? Follow my recipe and try it again! All the potatoes will be in perfect shape! Every summer, when the potato is in season, I always think of this braised potato dish that my mom used to make when I was little. Even when you’re done with the potatoes, you can just mix the leftover sauce
with rice and it’s so delicious. People add other veggies into this dish these days, But I always miss my mom’s simple recipe using only potatoes. Simple and delicious 🙂
