Hello. this is Sarang in Han’s Kitchen Today, I will make braised lotus roots which are pretty crunchy (ingredients) 700g(1.54lbs) of Lotus roots which are not yet peeled 5 tbsp of soy sauce 1 tbsp of oyster sauce 1 tbsp of sugar 5 tbsp of oligosaccharide 1 tbsp of cooking oil 2 tbsp of sesame seeds 2 tbsp of vinegar 2 tbsp of salt that we will use for blanching. 2 tbsp of perilla oil that we will use at the end of cooking these are already measured by the standard measuring method. I will peel them with a potato peeler. (Preparing lotus roots) It is kinda risky to use a knife to peel them off Using a potato peeler is an ultimate hack for peeling lotus roots (Fast forward) it is pretty awesome, isn’t it? trim dirty parts with a knife. done with cleaning them, then I will slice them. Slice lotus roots in pieces with 0.5(0.2inch) width done with slicing them, then I will blanch them We should blanch them to get rid of the strange taste in lotus roots (Blanching lotus roots) put sliced lotus roots in a pot put 1000ml(33.8oz) of water in it 2 tbsp of salt 2 tbsp of vinegar blanch them for 5mins or 7mins it took around 7mins since there are lots of water in it after then, we should clean them through the water clean it for two or three times through the cold water it is half-cooked with 7min blanching Strain lotus roots away from the water. (Making the sauce) Let’s make the braising sauce. 5 tbsp of soy sauce 1 tbsp of oyster sauce 1 tbsp of sugar 5 tbsp of oligosaccharide I will use half of them for now
then I will use another half at the end of cooking. mix it well turn on the gas stove (Braising lotus roots) turn on the gas stove then oil 1 tbsp of cooking oil on the pan put sliced lotus roots in the pan slightly stir-fry them after then put 500ml(17oz) of the water in it put the braising sauce that we’ve just made put like this cook it over high heat for first 5mins and then braise it over medium heat for another 20mins you will see lotus roots become sweet chewy make sure that you will cook it over high heat for first 5mins and then braise it over medium heat for another 20mins it is well braised. i will put 2 1/2 tbsp of oligosaccharide it will be sweet and savory shine almost done Finally, sprinkle 2 tbsp of sesame seeds then sprinkle 2 tbsp of perilla oil we are done with cooking crispy and braised lotus roots!
