We are cooking simple & delicious spicy chub mackerel! vegetable ingredients are.. radish, red & green peppers, scallions & garlics let’s cut radishes cut in four sections radishes are cut little thicker in small square shapes spread it at the bottom of the pot in square shapes… little thick and wide dice 4 peppers (2 red & 2 green) dice one by one like this starting from the tip, roll.. and cut it put inside the pot this green pepper will be used later (put it aside) this red pepper will be used later too (put it aside) dice (about 12) scallions in small size all these will be used later after spreading radishes and peppers at the bottom put chub mackerel on the top * important to put skin side (of the fish) at the bottom * * another word, meat side facing you! * we are using head, tail (gives out most flavors) and the body parts (most meat) of the fish okay, now let’s make spicy seasoning! we are starting from adding soy sauce this is Yang Jo soy sauce (양조간장) add 1 shot glass (soy sauce) add 1 shot glass (water) add 2 shot glass (water) add 3 shot glass (water) total of 3 shot glasses (water) add garlic cubes * check link above to learn how to make garlic cubes * add 5 garlic cubes add red pepper power 3 full Tbsp. red pepper power gently stir this is pear enzyme 효소 (replacement:sugar) I do NOT use syrup 1,2.. put 3 Tbsp. pear enzyme/sugar and the must put ingredient is.. volka (replacement: SoJu)! it gets rid of fishy smell 1 Tbsp. volka 1 Tbsp. sesame oil gently stir !! wait a minute ^_^ !! put pre-soaked (in water) shiitake mushrooms this adds richness to flavor put between fishes as a whole mushroom (do not cut) when eaten, it gives chewing texture like meat! put them like this (inside facing you) !!>____
