05 – Ballykilcavan – Brewery build


Everything takes longer than you think. You work out how long it should take and
how much it should cost and add 50%. The aim was to be brewing on-site by the end
of this year and we should achieve that. It just depends on what goes right and
what goes wrong between now and then. This is the empty shell of the brewery building We’re cleaning it up and stripping the walls
back, ready to make everything food safe. The brewing kit will be here in about eight weeks We have to have a lot of things in place before the kit
arrives: electrical work, plumbing and building work We want to make sure that we can install the kit
as soon as it arrives at the farm. We’ve got a well on site and we’ll be using
our own water to make the beers. 95% percent of what’s in the beer is the water, so it’s
very important to get right for flavour and quality. We will have a beer made just from ingredients from the farm:
the water, the barley and the hops that we grow here. That’s really exciting to be able to do. A lot of breweries are based on industrial estates, but it’s
absolutely fantastic here. It’s a beautiful place to work The buildings here are steeped in history – it’s a great
setting for a brewery. Nigel comes with this huge wealth of experience from brewing with
very big brewing companies. The fact that he has so much passion still is a credit to him. Just because we did something a certain way in a different
brewery doesn’t mean it has to be done that way everywhere. Then we’ve got Joe who’s a very very good home brewer and he’s
scaling up to meet Nigel in the middle. I’m coming in with crazy ideas about different
styles, so I think we make a good team. There’s a huge amount that you can learn just by
saying less and listening and watching! As soon as we get in here, we can scale up production. We have a distribution arrangement in place
so we can cover the whole of the country We can start looking for exports quite soon. It’s a pleasure to work on something brand new and
hopefully it will develop into something very exciting.
