06 – Ballykilcavan – Our new brewery


About six months ago this place was a completely empty shell. It’s been hard work getting it built but it’s
been really satisfying restoring the building We now have all the kit in and everything is in place It’s actually gone very well. The kit arrived in lots of pieces and we had to put it
together and connect all the pipes and vessels It was very exciting when the kit came off the
trailer and arrived to the brewery. We had to position everything on the
floor so that it was all totally level. The fabricators have done an unbelievable job because
they’re used to modern buildings. This is an old building, so nothing’s square –
there are no right angles in here. The pipe work between the hot-water tank and the brewery
had to be specially designed to get through an old doorway. It’s exciting to be breathing life back
into a building like this. Our water comes from the well which is
only about 50 meters away from the brewery. All the barley is grown on the farm
as well as some of the hops. It’s far easier to do anything in your own brewery. We
can brew more beer and a range of different beers. The great thing now is that we have complete consistency . Joe can come up with his magic new recipe
and we can try it on the small test kit. We have seven fermenter spaces now, when we were
working with just one fermenter. We can expand the range: we can brew a completely new beer
and still brew our core range at the same time. We can also expand the volumes and that
allows us to break into new markets. The next thing for us is to put in the tourism infrastructure. I want people to come down here and see this building. We put blood, sweat and tears into this place and I want
people to want to come down and see what it’s like. They can see the barley being grown, taste the malts
that we use and see how we make the beers. This time next year we’ll have released a few seasonal
specials that will be new and exciting.
