Okay, so let’s break this down into 6 easy steps.
First off, you need a good cut of steak, nicely marbled, liberally apply coarse salt and fresh
cracked black pepper to your steak. Set up your grill for 2-zone cooking, one
side very hot, and the other side very cold. And lay your steaks on the grate.
You get that shear that you’re looking for. Grill marks, of course, optional.
Cook each side 2-3 minutes depending on the thickness of your steak.
Once you’ve shear both sides of your steak, removed and place it on the cool zone.
Now we’re going to let it cook to temp. Depending how you like it, medium is about
145. When it’s reached the internal temp that
you desire remove it, set it on rack to rest. Resting should be from 5 to 10 minutes minimum.
It is time to cut it and enjoy. That’s it, 6 easy steps.
