Binging with Babish: Pasta Aglio e Olio from “Chef”


Hey guys, what’s up? I’m back with a new
episode and it’s been kind of a long week so… I wanted to make something a little
quicker a little easier this week. And I’ve always wanted to try that pasta
Aglio e Olio from that flirtatious scene in Chef. And look at this, it only
has six ingredients, perfect. So we’re gonna start by bringing a large pot of heavily salted water to a boil. And while that comes up to a boil, we’re
gonna peel our garlic. And this is a great little trick. You take all the cloves of garlic and put them in a tupperware and give them a good shake. Like just shake the hell out of it. And then, you open up, you have perfectly peeled…oh that didn’t really work, did it? I — I guess we’re gonna peel these by hand, so get your tools ready. And get to peeling. Be sure to use your Scotch as necessary. Now we want to slice all the cloves of garlic very thinly and put them aside while we pick our parsley leaves off their stems. Now, we want to get rid of any big thick stems, but smaller ones are ok because we’re going to chop this pretty fine. So we’re gonna chop it up very fine before heading over to the stove and add our pasta at the boiling water And add about a 1/2 a cup of olive oil to a large sauté pan. Once shimmering, we’re going to add the garlic… And just when you start to see it turning brown, add the red pepper flake, and remove it from the heat. The garlic will continue to cook until a nice toasty golden brown, at which point you’re gonna add the pasta. We’re gonna add back some pasta water to help create more of a cohesive sauce before mixing in the parsley. A big squeeze of lemon juice… And give it one last check for seasoning and hit it with any salt and pepper that it needs… Give it a good stir… And then plate it up just like John does with a big carving fork. Make a nice little nest like that in the center of the bowl. Now this is an example of a recipe that is greater than the sum of its parts. It was absolutely fantastic. If you don’t believe me, let’s hear what I said after my first bite… “Mmm…oh sh*t, that’s good…mmm.” It really was that good. The only thing missing was Jon Favreau
for me to make sexy eyes at.

  1. Nice simple recipe. For years I’ve been doing this with anchovies and no chilli flakes. I always like the saltiness of anchovies. But it’s very good this way also.

  2. This is so wrong.
    First, bring heavily salted water to a boil while in a pan you heat the olive oil.
    Throw the spaghetti in the boiling water. At the same time put one/two cloves of sliced garlic in the oil. Then add chili pepper flakes.
    When the garlic becomes slightly brown add some of the pasta starchy water to the oil. You need the starchy water and the oil to form an homogenous cream and also the water will stop the garlic from cooking leaving it crunchy.
    Finally, add the pasta to the sauce.
    That’s really it, no parsley and absolutely no lemon whatsoever.

  9. One trick for peeling large amounts of garlic is to soak the cloves in warm/hot tap water for 5-10 mins. The skins should peel fairly easily with a pairing knife.

  15. I made this for a potential girlfriend tonight and she loved it. Even though I forgot to add the lemon juice and the salt and pepper, but it still came out pretty good.

  16. I tried to make it. Added the pasta to the olive oil and the oil flew fucking everywhere. It did turned out pretty okay though

  17. Ending up having to change it a little, used minced garlic and dried parsley also didn’t have lemon or spaghetti so i used elbows but it came out amazing.

  21. This recipe is unbelievably good. The only suggestion I would make to improve it slightly, is some freshly grated Parmesan on top (of the plated dish, not while cooking.) One of the simplest, most delicious dishes ever.

  22. I've been watching all of your videos for a few months now, dreaming about trying to make something. I tried your chicken noodle soup last week. It was a HUGE hit with my husband, who normally doesn't like chicken noodle soup. Well after watching your pasta basics video and seeing this dish for the umpteenth time, I finally made it tonight. I'm amazed at how simple the ingredients and process is, yet how flavorful it was. I did even go out and buy a pepper grinder because of you, and I don't regret it. Thanks for the inspiration to cook really good food!

  25. missing ingredient. is baby onion …so is it really just me but in the video it looks like baby onions and some garlic when you slice garlic its rounded or depinding on your cut but in the video the …..so called garlic is feathered like… a baby onion so i belive there is a missing ingredient aka the baby onions so other cooks check the video lemmie know

  26. Screwing up the garlic is insanely easy. What I do in order to save my garlic is :
    1. I add the paper flake before the garlic and wait until the oil becomes reddish then turn the oven off and let it cool off.
    2. I add the garlic on low to mid heat and wait until small bubbles start to come out of the garlic and then add the pasta.

    Its insanely delicious recipe I make it all the time. Thanks Babish !
