BRAISED FISH CHINESE STYLE (紅燒鱼)


We are going to cook braised fish, Chinese style today. As usual, it is another simple recipe. We need 5 slices of ginger and 5 spring onions cut into thick strips. For the fish, we are using yellow croaker today. Coat the fish with a tablespoon of corn starch. Pan fry the fish in a hot pan for 3 minutes
on one side. Turn over and fry the other side for another 3 minutes. After 3 minutes, remove the fish and set aside. In the same pan, fry the ginger and white
part of the spring onions. When the edges of the ginger is brown, add half the green onions. Add one bowl of water, 2 tablespoons of soy sauce and one teaspoon of sugar. Now we return the fish into the pan let it simmer for 2 minutes turning the fish around half way through the simmer. Add some salt to taste. Finally add the remaining spring onions.
