My father was a general in the US Army, and my mother was a lawyer. It was always the same “Lawrence, brush your teeth, Lawrence, tidy your room, Lawrence, please”, but I didn’t like it, at all. I didn’t like school, and school didn’t like me. So, one day, daddy said : “Lawrence fuck off ! Find a job !” I started by doing the dishes in a pizzeria. Two years later, I was working for Grant Achatz at the Alinea. Our cuisine tasted like nothing you know. But, what I was looking for was the taste of nothing, the true nothing. So, I was wondering, what taste like nothing ? I try to find an answer for months, I was desperate, I wanted to give up. I took a deep breath, trying to relax. And then I got it. The air. You cannot eat it, you cannot drink it,
but you can taste it The real question was : how to cook it ? So I’ve been around the world
to bring back the best airs on Earth. And then, I figured something out : Air is like food, all you have to do is to cook it, that’s the secret. I think, at the beginning, people didn’t get it. And then, the food critic Jay Rayner came, in my restaurant. And he loved it. Now I’m full for two years.
