I am Ann Reardon Today we are making an indulgent chocolate brownie mars bar cheesecake.
This is an easy dessert to make, tastes great and looks impressive and you can even make
it ahead of time. For the brownie part you will need vanilla
extract, eggs, butter, sugar, baking powder, cocoa powder and flour. All of thse recipe
quantities are on the website howtocookthat.net in grams, ounces and cups. Place your butter into a bowl and then melt
that in the microwave or stove top if you like. Add the sugar and stir that in. Once
it is all stirred just check the bowl and check that it is cool and if it is cool enough
you can add the eggs and stir that in. If you heated it on the stove top you might need
to wait a little minute for that to cool down. Add the vanilla and mix that through and then
just tip in the flour, baking powder and cocoa powder. Mix that through until it is just
combined. Then all you need to do is add in your white and dark chocolate melts and stir
again. It really is an easy recipe that one. Pour into a baking tin lined with baking paper.
I like to let the paper hang over the edge on two sides just to make it easy to get it
out once it is baked. Put it in the oven for around 15 minutes.
Until it is no longer jiggly in the middle and if you put a knife in the middle it should
out clean. And then you can just let that cool To make the cheesecake part
measure out your cream cheese, cream, milk, sugar, gelatin and water.
Tip all of the water into the gelatin, and stir it in. Use room temperature water here
it shouldn’t be hot water, just normal. The gelatin will soak up all of that water so
just leave that to one side. Now we want to whip our cream to soft peaks
and then set that bowl aside. You’ll need that later. Then in a larger bowl beat the
cream cheese until it is soft and it is important that you beat it here until it has no lumps
left at all it should be nice and smooth. Then add in your sugar and beat it a bit more.
Then take your gelatin that will by now look like this, remove the spoon and microwave
until it is melted into a liquid like this. Pour that into the cream cheese mixture and
allow to mix through, that will make it go quite runny then add the milk, whisk that
in and add your vanilla as well and keep whisking it until it is smooth and creamy.
Add you cream to the cheesecake mixture and fold in using a spoon or a spatula. Next take a tall round container with straight
sides and use your container to cut circles of brownie. You should get two whole ones
and two halves. Line the base and sides with non-stick baking
paper. Put the two halves of brownie at the base and see how we’ve got a gap just add
extra bits of brownie off cuts to fill up those gaps.
Spoon in 1/3 of your cheesecake mixture and spread it fairly flat it doesn’t have to be
exact and then add another disc of your brownie into the container on top and push it down.
Add another 1/3 of the cheesecake mixture and the next brownie disk. And then finish
it off with the rest of the cheesecake mixture on top. Then place the whole thing in the
freezer overnight. If you are making it ahead it can be in the freezer for up to a month. Once frozen tip it out of the container and
peel off the baking paper from the base. Put your serving plate on top and flip it
over so that it is the right way up. Peel of the baking paper off from around the
sides. To decorate place your chocolate and milk
or cream into a bowl and microwave in 30 second bursts and stir until it is nice and smooth
and a creamy ganache like this. To make it look like it is dripping down the
sides take your spoon near the edge and drop some of the ganache half on the cheesecake
and half over the edge. Because the cheesecake is still frozen it will drip down but it is
going to set fairly quickly there so you get a nice drip down the side.
Now add a thin layer of ganache in the centre at the top.
Chop up some mars bars or other chocolate bars of your choice and add the off-cuts of
chocolate brownie, I hope you didn’t eat those. Add them to the top in the middle and drizzle
it with ganache. And then arrange the mars bar slices on top of that with more brownie
on top to make it nice and tall. Drizzle with more ganache and then finish it off with the
last peices of mars bar on top. Allow to defrost it will take a couple of
hours at room temperature or over a whole day if it is in the fridge and then serve
