Hi everyone I’m the Executive Chinese Chef for Singapore Marriott Tang Plaza Hotel my name is Brian Wong Currently, we have a promotion called “An Oriental Administrative Professionals Week” which features a 5-Course Set Menu from 24 April to 28 April 2017. Within the menu, we have a dish called Claypot Braised Tiger Prawn with Glass Noodles in Superior Stock so what do we mean by “Superior Stock” To create our “Superior Stock” ingredients such as chicken feet fresh chicken meat & lean meat are simmered over hours to extract the flavor. You will find that the soup is “thick”, and that is not caused by adding starch. By adding chicken feet to make our stock, it creates the bright white soup that tastes sweet wish that you would come down and try!
