Welcome back to Cooking With Kade. Today we’re
going to make a Cajun Gumbo for Mr. Keith Bettag’s favorite soup challenge. This is
going to be a chicken, sausage and smoked turkey neck gumbo. I know most of y’all make
a good roux but today we’re going to use a store bought roux that work just fine. First
thing you have to do is chop up some onions. Alright in the pot we have about five tablespoons
of heated roux inside of the pot. So we’re going to add some chopped up onions. This
is five tablespoons of roux and one large onion. We’re going to add a little bit of
water at a time so that the roux mixes up well. You want to keep stirring your roux
up with the water until it kind of looks like this. Here’s a tip you want to stir this and
make sure you get all the lumps out. Alright our roux and water is starting to heat up
so we’re going to add our smoked turkey necks. And then we’re going to let that cook for
an hour. Smoked turkey necks give gumbo a really good flavor. It’s been forty five minutes
so let’s see how our gumbo is. Are you paying attention. Our gumbo’s looking nice so let’s
get our sausage ready. Right here we have a couple of pounds of smoked sausage so we’re
going to cut that up and let it get happy in the microwave. We put our sausage in the
microwave so that it can get all the grease out. Our sausage finished cooking in the microwave
for a couple of minutes so we’re going to add it to our gumbo. Here’s a tip it’s hot
so you need to be careful or you might get burnt. Alright I’m going to season our cut
up chicken. Now we’re going to add the chicken to the pot. Are you paying attention. Our
gumbo’s done and this is what it looks like. Alright I’m going to fix my plate and I’m
going to see what this gumbo is all about. Let’s get some rice. Alright we’re all done
so let’s see what we got. Some sausage some chicken smoked turkey neck little bit of potato
salad. Let’s give it a taste. MMM MMM This is my favorite soup.
