Create Quick Tip: Braising

Quick Tip from A Chef’s Life. – If you wanna braise
something like a short rib, you need to brown it on all sides, then spread the short
ribs out in a single layer and fill them up about halfway
with a flavorful liquid. You want the top half of your
short rib above the liquid so it can continue to
caramelize and build flavor as it cooks on a very
low and slow temperature. I love a pan like this for braising because it goes easily
from the range to the oven.
