Discover DMACC Eposode 26 – Chef Anderson Retires


Long time Executive Chef Robert Anderson retired
after four decades at DMACC’s Iowa Culinary Institute. Chef Anderson was instrumental in establishing
and leading the Iowa Culinary Institute to become the Nationally recognized program that it is today. The college has named the reception area
Anderson Hall in Chef’s honor. Recently, Chef John Andres was named as the
new director of the Iowa Culinary Institute. And while he has big shoes to fill, his love
for culinary and focus on hospitality has him excited to take on the new leadership role. So I love food, I love creating. I am a chef by nature, I think, but ultimately
for me it’s all about the hospitality. I always say I’m a chef, I’ve been trained
as a chef, but I’m really a hospitality guy. And that’s my thing, you know, working in
hotels, working in restaurants, retirement homes, wherever it may be, country clubs. I like making people feel comfortable. Making them happy, pleasing them with the food,
the beverage, the service that I give them. I guess first and foremost, our students are trained in culinary arts, hotel restaurant management. They work in all of the top restaurants, country
clubs, hotels, hospitals, convention centers, grocery stores, all throughout Central Iowa. You know, in my opinion, education is a, it’s
a service industry in and of itself. So it really is all about teaching our students
all of those skills that go into the full experience that chefs are giving to their
customers these days. You know, our culinary school here is just
as good as any around the country. You know, I always say your experience is
what you make of it. I went to the C.I.A. in New York. I didn’t have to do that, um, I spent a lot
of money to do that, which I probably didn’t need to do. And I had a great experience there, but that’s
not to say that students don’t get the exact same experience here every single day because
of the time and effort and passion they put into their studies here at the Iowa Culinary Institute.
