In 2016, Tetsu Kasuya from Japan became the WBrC champion. Right after the competition, he release his recipe for the championship. It’s called 4:6 method. I think it’s the best recipe for those who use Hario V60 at home. Let me tell you 3 good reason I think it’s the best recipe. 1. It’s easy. You don’t need a great skill. you just POUR THE WATER. That’s it. 2. It will help you to get same extraction result any time you brew it. Brewing coffee is very complex chemical process. So if you’re not a professional barista, every time you brew coffee, your coffee taste different. But with this 4:6 method, you will get very consistent result on your brewing. I’ll tell you the reason during the brewing process later. You’ll get very clean and sweet coffee with this recipe. Let’s get it started. I’m going to use 20g of coffee and 300ml of water. brewing for 3mins 45 sec. Water tempurature is 93 degree celious. if you boil water it’ll reach 100 degree. So just leave it for about 30 sec to be cool down a little bit. pour 60ml of water 5 times. interval is 45 sec. The key point of this recipe is grind size. Grind your coffee very coarse. As you see in the picture now, grind your coffee as coarse salt size. 20g of grind coffee grind coffee as coarse salt. Rinse the filter. now it’s ready to brew! Pour 60ml at first pour. pour it clock wise or anti-clock wise. You don’t need a special skill for pouring. Just wetting the coffee evenly, that’s all. Wait for 45 sec. 2nd pour :60ml again and wait for another 45 sec. The reason why this recipe gets consistent result is very simple since the coffee size is big enough, it doesn’t move dramatically during pouring. As much as coffee moves during brewing by pouring water, It’ll be affeceted by the pouring skills. So the result will be vary. And forthemore, since it has very simple recipe, pouring 60ml water 5 times, It’s easy for everyone to brew it on precise manner. 45 sec passed again. Let’s pour another 60ml. It’s really important that after pouring 60ml water, it must perfectly drain from coffee server in 45 sec. If it’s still dripping after 45 sec, it means you didn’t grind your coffee coarse enough. So grind it more coarse. We almost there. Pour another 60ml. I pour 4 times 60ml each. It’s 240ml water poured so far. 1 more 60ml pour and it will be done. When you pour, you just pour it fast. You don’t need to be to catious in you pouring. Just POUR! Now last pour!! 60ml water and wait for 45 sec. And now i’ll tell you the reason why it tastes very clean with this brewing method. Becuase in this method, Water doesn’t contact coffee more than 45 sec. It drains before 45 sec. If coffee meets water too long, it’ll get to bitter taste. It can be over extracted. and forthemore if the coffee grind is too fine, it has big chance to be overextracted also. ok now 45 sec passed. Take your dripper out. Now is the time to enjoy great coffee. You maybe surprised by this weird method of brewing. Of course coffee can be enjoyed by different way and different preferences.
