Hello, everybody. This is Sarang in Han’s Kitchen. We will make Korean braised chicken which is Jjimdak. At first, I will show the ingredients (Ingredients) 500g(1.1lbs) chopped chicken it’s already done with being blanched 200g(0.44lbs) of rice cake for tteokbokki 200g(0.44lbs) of udon noddle (Cleansing the ingredients) I will make jjimdak and I will put tteokbokki tteok(rice cake) in it. soak them in the boiling water. it is about 200g(0.44lbs) This is udon noddle which we can readily buy in an Asian mart. I will use udon noddle although you can use sweet potato starch noodles. soak them in the boiling water. blanch the chopped chicken put 1 tsp of ginger powder when it is well blanched, then I will clean it through the water. there are lots of dirty things to come out from the meat These are the bad substances that we would rather get rid of from it. then, clean it well through the water 1 potato 3 button mushroom 1 onion 1/2 carrot 3 Cheongyang peppers (not necessary) green and red bell peppers each 1 green onion I will show the ingredients for making the sauce 5 tbsp soy sauce 3 tbsp oyster sauce 2 tbsp oligosaccharide 1 tbsp Cheongyang pepper powder(not necessary) it depends on your preference of spicy foods.
I will use this since my family members are damn craving for it 1 tbsp minced garlic 1 tsp black pepper powder 1 tsp sesame seeds 1 tbsp ginger powder 2 tbsp cooking oil 1 tbsp sesame oil 1 tbsp cooking wine we are all done with preparing the ingredients. (cooking) Let’s start to slice the veggies slice the potato in big cubes. cut it in half and slice it in three pieces. cut a carrot in half and cut it in big cubes. likewise, cut an onion in three pieces. do the same way with button mushrooms as well you can use leftover veggies in your fridge I often do it when I cook jjimdak slice bell peppers like this. cut them in big cubes like this way. cut Cheongyang peppers diagonally in big pieces cut green onion diagonally in big pieces as well (Fast forward) we are all done with slicing all veggies. score the chicken meat so that it cooks evenly turn on the gas stove oil the pan with 2 tbsp of cooking oil stir fry the chicken (Fast forward) while it is being stir-fried well, I will make the sauce. (making the sauce) 5 tbsp soy sauce 3 tbsp oyster sauce 2 tbsp oligosaccharide 1 tbsp minced garlic 1 tbsp cheongyang pepper powder(not necessary) As I said, I will put this since we like spicy things. 1 tbsp ginger powder 1 tsp black pepper powder mix it well return back to the pan, stir fry the chicken well by using a ladle. when the meat is on the half way to be done, I will put the veggies. At first, put and stir fry potatoes and carrots stir fry it over medium heat when the meat becomes well enough cooked, put 500ml of water. boil it over high heat when it is boiled, put the sauce. After boiling them more, then I will put the veggies (Fast forward) when it becomes quite boiled, put tteokbokki tteok(rice cake), udon noodles and the veggies. put ttoekbokki tteok(rice cake) and then boil it more. To make thick broth which is good for jjimdak, boil it quite more. (Fast forward) it became well thick broth now, it is best time to put udon noodles then put all the veggies except for green onions Lastly, put green onions. put 1 tbsp of sesame oil cooking is almost done. yes! it’s just done. turn off the gas stove it just finished Korean braised chicken; jjimdak.
