[ENG SUB] Vietnamese braised fish/ Geschmorter Fisch in Tomatensoße/ Ca Kho


Hello, it’s nice that you tuned into thuskochtour again. Today I have a delicious stewed fish in tomato sauce. This dish is a typical vietnamese fish dish. For preparation it takes a bit longer than other recipes, but it is very easy. And now I’ll show you how to do it and what you need for it. You need:
Approx. 1kg salmon 5 tomatoes Tamarind 6tbsp fish sauce concentrate 4tbsp sugar 2 galangal roots 1 piece of ginger Some bay leaves Some pepper 1tsp sugar Half of a cucumber Cooked rice First peel the ginger and galangal roots and cut them in thin stripes. The galangal belongs to the ginger plants. It looks a lot like ginger. The roots are a lot milder, so it isn’t that spicy. The taste is spicy-intensive with a bitter-aromatic note. Now I give into a bowl and then cut the tomatoes into rings. Now I take a big pot and layer it all. Put half of the tomato rings, galangal, ginger and tamarind first and then put the rest of tomato, galangal and ginger. Then add the bay leaves and the fish. Finally spice it with sugar, pepper, salt and fish sauce concentrate. I left the fish in one, but you can also cut it into pieces if you want to. Put the pot with the lid onto the cooker and let it stew on the lowest level. The liquid, the so called garsud, emerges from the fish, the roots and the tomatoes. Mind the cooking time of 40min., so the bottom won’t burn, so look into the pot some time and add water eventually. After 40min. remove the pot from the cooker and let it steep for a day. That way the fish tastes the best. Heat up the fish for some time the day after and now the stewed fish can be served with cucumber and rice.
