FST 3V – Introduction to Brewing and Beer – Charles Bamforth – UCD


[MUSIC PLAYING] Barley, the soul, hops, the
spice, water, the heart, and yeast, the workhorse– beer,
where science and technology meet art in the production
of the world’s favorite adult beverage. Hi, I’m Charlie Bamforth. I’m a distinguished professor
of food science and technology at UC-Davis. And my life’s work
has been on beer. When you take my course,
Introduction to Brewing Beer, you’ll learn about
the journey that these wonderful
raw materials take in the malt house
and the brewery in the production of a
huge diversity of beers. You’ll discover the
history of beer, why different beings look
and taste the way they do, and why beer in moderation can
be a valuable part of one’s lifestyle. You’ll interact with me, your
TA’s, and your classmates through online discussions
and online office hours. And while the course will
require as much time and effort as a traditional
course, you will be able to do the
work in your own time. I hope that you will
join us on this journey into the bounty of beer. And I know that it will give you
a true appreciation for brewers and the product that
