ICE Student Stories: Dreaming of Culinary School for 15 Years


So I’m thirty eight now and I’ve wanted to
go to culinary school since I was twenty-three. I really got into food when I was in college
and I started watching a lot of old school Food Network, this was like late nineties
and it was Mario Batali and Emeril Lagasse and it was very kind of teaching focused Food
Network and it just sparked an interest in me, so I thought I wanted to go to culinary
school. I had some people in my life that loved me,
friends and family that thought maybe it wasn’t the right path for me and that’s how I ended
up in a career path that wasn’t necessarily the right thing for me and the past fifteen,
sixteen years has been me trying to get to this place where I am right now. I just realized, I’m never going to be happy
unless I follow this passion inside me which is to work in food and I was going to make
it happen one way or another. I don’t have the luxury of working my way
up through a kitchen at this stage of my life, so going to culinary school will certainly
get me a certain amount of confidence when I do walk into a kitchen for the first time. If I walked into kitchen before I started,
I would have no clue what I was doing. I love the instructors, not only are they
incredible instructors and have amazing real world experience but they’re just so approachable
and so available and good humored. The other thing I like about the program itself
is that, it seems to be cumulative, so I feel like every day, every lesson has been building
upon the one beforehand. So you’re not learning something in mod one
and then you never look at it again. So it gives you certain amount of confidence,
not over confidence for sure but at least you have a sense of the landscape of the environment
that you’re walking into and that’s an amazing feeling to have when you’re starting a new
career, especially in the culinary world.
