AND FROM THERE, IT’S GOING TO GO INTO THIS SECOND VESSEL, WHICH IS THE BREW KETTLE. THIS IS WHERE WE’RE GOING TO ADD HOPS TO THE MIX. HOPS WILL ADD FLAVOR, AROMA, BITTERNESS. DEPENDING AT WHICH POINT YOU PUT THEM IN THE BOIL. FROM THERE, IT WILL GO INTO WHIRLPOOL. THIS IS BASICALLY ACTING AS A STEP OF CLARIFICATION FOR THE WART. AND IT WILL BE CONVERTED INTO CO2 AND ALCOHOL. TRINI: HOW LONG DOES IT STAY IN THE FERMENTATION VESSELS? IF WE’RE AGE MAKE AN ALE, IT WILL BE IN THERE ONE OR TWO WEEKS. FOR LAGGER, IT WILL TAKE THREE WEEKS. TRINI: HOW MUCH BEER DO YOU MAKE? CURRENTLY ABOUT 11,000 BARRELS OF BEER A YEAR. WE’RE EXPANDING. VERY EXCITING.
