Loyalist College: Collaborating with Craft Brewers


As a community college we endeavour to
work with local industry. There’s an increasing number of craft brewers in
the area and a lot of these are startups and we would like to support them.
My name is Dr. Kari Kramp. I’m a professor of Biosciences and a Principal
Investigator in the Applied Research Centre for Natural Products and Medical
Cannabis. We’re very excited about the equipment that we have to support
regional craft brewers. We have a packaged beverage analyser which allows
us to do in-house testing in the laboratory at
the College for beer. We also have a Craft 2 Craft set which allows us to
take our analysis on the road with us. We can go directly to industry partners and
perform the analysis that they require for product development, to monitor their
fermentation process quality parameters such as alcohol content, CO2, oxygen,
turbidity, density, and this is what we enjoy. The mobile equipment that
we’re providing allow us to have student researchers, like Dallas, to work together
with brew masters, brew technicians throughout the cycle of product
development. Now that some sampling that they’ve been sending out to other labs
to do, we can now provide for them and have streamlined that process. It feels
like you’re more involved in their product development as opposed to just
providing the analysis. You actually get to go in and be a part of their
work space and see all the work that they’re doing and there’s an actual
personal relationship that you get to develop and it feels less like work. I
guess I would say and more like a personal relationship.
The benefit of bringing students, bringing this equipment to breweries
like Signal is providing an opportunity for us to work together to generate
high-quality, consistent and great tasting beer.
