WE HAVE CREATED A RECIPE TO BE SURE THAT THE BEANS GO TO WHERE WE WANT THEM TO BE FLAVOR WISE, DEVELOP THEIR SUGARS AND THINGS LIKE THAT. IT WILL COME OUT NICE AND SWEET. AFTER THE 15 MINUTES THEY COME INTO THIS TRAY HERE LIKE YOU ARE SEEING. COLD AIR GETS SUCKED THROUGH WHILE THEY STIR EVERYTHING. WHEN I SEE A BEAN THAT I LIKE, I REACH OUT TO VENDORS, FARMS, AND OTHER PEOPLE AND SAY “SHOW ME WHAT YOU’VE GOT.” WE TASTE IT AND FIND OUT IF WE WANT THIS. WE BUY IT AND DO TINY SAMPLE BATCHES ON A ONE POUND VERSION OF THIS GUY HERE. IN THE END WHEN WE DECIDE THIS IS WHAT WE WANT AS OUR HOUSE DARK ROAST WHICH IS WHAT THIS IS FROM MEXICO, WE BUY IT AND THAT’S THE RECIPE THAT WE USE. SO COOL. I LOVE EVERYTHING ABOUT THIS.
