Richard Blais’ Burgers With Candied Onions, Braised Bacon & Cheddar


(upbeat music) Yeah so our burger’s cooking away but the really interesting element to this is homemade cheese sauce. So cheese wizard if you will. (laughs) Cheese wizard. A cheese Wizard sauce. So we have in our pot right here, we have some milk that’s cooking and we’re simply gonna put some cheddar cheese into — Some nice sharp yellow cheddar. We’re basically gonna make a sauce like you would for like a macaroni and cheese. Right. That’s going to melt into our milk. And then that’s gonna dissolve. And then what we have here is this cold mixture. So milk and some cheddar cheese. So we just cook the milk down, melt the cheddar into the milk and then where’s it going? Super simple. Then we’re gonna put it in one of these. So this is a siphon. You see this when you go to the coffee shop. They put whipped cream on your coffee drink. And they have them at the regular hardware store. They have them down at the ACE. My husband has one of these ’cause he, I told you, he loves the mixology — He’s into it! He’s got all of the tools. He’s into it. He’s got all the stuff. So instead of whipped cream we’re making whipped cheese basically. So this cheese wizard, if you will. So we put our cheese sauce into the siphon. And these you can find at a lot of local stores now. They’re relatively inexpensive. So again, the tool of the modern chef but quite honestly, everyone can cook like a modern chef. Like I said they’re at the coffee shop. Yeah you can literally get these anywhere now. Yeah they’re in your everyday life. Make your own homemade whipped creams and all that. And then we’re gonna charge it up. And what this does is it’s actually going to inflate the sauce in there. You’ll always want to charge, you’ll serve upside down. Shake it up. Give it a little shake and then you chill it out. You’re gonna chill it for a little bit. Throw it in the fridge for ten to fifteen minutes and what we’re gonna do is we’re each gonna dress our own burger. Put the patty’s on the sandwich — Yeah so I’m gonna do an English muffin because– I love english muffin burgers! Good texture to it. So — The patty pal’s right there. Yeah the patty’s here. And maybe could you throw some of those caramelized onions? Sure. I want onions on mine. Yeah I love onions! Beef and onions it’s sort of like tomatoes and basil. It works well together. I love onions. Yeah! They’re in. They’re down with the onions! (audience clapping) They’re down with the onions. All right, let’s see. We got some bacon over there you can throw on. A little bacon? I’m just gonna go bacon on mine. I know there’s tomatoes over there. Yeah we’ll throw bacon on there. It’s the summer time we can throw tomatoes on there if we want. Yeah why not. And then really though the key element, now we have our cheese wizard. I’ll go first and then you can go. All right. So this is kinda fun, too. This could get crazy like I could squirt this all over the place. So — That’s why we bring him. It’s literally a blast when he comes. It’s a cheese wizard party. But now we have this whipped cheese. Whoa! (audience clapping) Ooo! That is awesome! Look at that! Extra cheese, extra cheese. (upbeat music)
