  3. I roast vegetables (broccoli, asparagus, bell pepper, zucchini, mushroom, carrot and etc.) at 400 degrees in the oven for 30-35 minutes. I think 450'F is too high and don't cook them too long.

  4. Looks yummy. But if you wantโ€™s to reduce carbs is this okay to eat? I am a diabetic and trying to cut down on rice, pasta and bread ( sugar of course)

  5. You have way too much in the pan which causes your vegetables to steam each other. You need half that in each pan for a real roasted taste. 500 degrees is best for fifteen minutes. Your veggies looked steamed not roasted.

  6. Hint; put all the stems, end cuts etc. that you're tossing away into a pot of water and simmer covered for a couple hours, drain and save the water as veggie broth.

  7. Suggestion: Try putting the veggies in a ziplock and measuring the oil before pouring it on the veggies.

They look delicious, my mouth is watering…again! ๐Ÿ˜‹ A tip which Mary Berry (you might have seen her in Bake Off) uses, put the veg into a plastic bag, add the oil, salt and pepper mix it around, then pour onto your baking tray, all the veg get completely covered. I wonder if curry powder would be good in it, I love curry, I love roasted vegetables, especially sprouts, they completely change flavour!

  11. Is that parchment paper?? I'm thinking if I use the aluminum foil I have here, it will hold moisture in, causing the veggies to steam, instead of roast. Thanks for tasty way to eat my veggies! Luv 'em, but have to be prepared correctly or they're limp and tasteless…..ugghhh.

Unfortunately olive oil is not a high heat oil therefore itโ€™ll change from being a good oil to a bad oil I believe going from a mono unsaturated to polyunsaturated could also turn in rancid and not be healthy to eat or consume (once it starts to burn the fumes are actually toxic). The better cooking oilโ€™s for high heat are coconut oil and avocado oil.
