A great way to cook roast beef is low
heat for a longer time, also referred to as low and slow. This will caramelize the
exterior of the roast while maintaining a moist interior without excessively
shrinking the size of the roast. The ILVE range provides a conventional heat
function in the oven in which surrounds your food with top and bottom heat. This
will brown the top of the roast to perfection as the bottom heat cooks the
roast to your desired temperature. Conventional heat is also excellent for
braised dishes and casseroles.
