San Diego Dining – Braised Scallops at Catamaran Resort


Im Chef Steven Reimer, today we’re going to
prepare Braised Scallops with Spicy Rice Noodles and citrus. This scallop dish is a real favorite here at the Catamaran We take diver scallops, and in a fashion that combines to cooking techniques we sear the scallops and then add liquid, a technique called braising then slowly cooked in that liquid to maintain the texture of the scallops meanwhile a salad is prepared using Vietnamese style rice noodles lime juice peppers, mint and cilantro, we mix them together to form the base for the scallops we’ll finish this dish by adding local
citrus into the braising liquid with a little bit butter to bring the
sause together add the citrus a bit of the sause and some, avocado slices to
finish the dish Its a very refreshing dish on a warm day
