Seven Sheds Brewery | Discover Tasmania


MAN 1:
There were actually six sheds
and we built a chook shed, which was the seventh shed. And when we were fishing around
for an idea for a name for this business, Seven Sheds
seemed fairly natural. My name’s Willie Simpson
and I’m the co-owner of Seven Sheds. I read the definition
of an artisan and it said an artisan is someone
that uses the best ingredients, a very slow
traditional production method to make a piddling amount
of something that tastes bloody fantastic. And that’s
a pretty good definition of what we do at Seven Sheds. We’re often sometimes described
as a sleepy little hamlet. It’s in the northwest
Tasmanian region. We’re part of a network
of niche producers in this region, so you know
it makes sense to use all sorts of local ingredients. You know, people come to me
and say, “Which is your favourite beer?” And I say, “Well, come on,
these are all my babies, I can’t have favourites.” We had a plan B
in the early days which was we drink
all the beer ourselves if no one wanted to buy it. And luckily,
we didn’t have that problem. The problem we had very early on
was people were buying the beer and we’re thinking,
“Oh, right, okay, we’d better brew another batch.” People come to visit Seven Sheds and they get a very clear sense
of place, of where we are,
the fact that we’re a family, we’re making this beer
on our property. And the minute you translate
that production process to an anonymous warehouse
somewhere, I think you’ve lost the sense
of where you started from.
