Hi All !!! Hope All are doing fine. I am fine too !!! Today I am going to do a vegetarian dish Soya Chunks Dry Roast To get the notification of my videos just enable the “Bell ” right next to the Subscribe button !!! Also you can download the app for Veena’s Curryworld So Lets start making Soya Dry Roast !!! Soak 100 gms of Small soya chunks in hot water for 20 mins Squeeze the water out and wash it for 2 or 3 times There is a different smell to this Soya. By squeezing the water out that smell will also be reduced. The Soya will absorb the water and become spongy and big. So we need to slice it to 2 – 3 slices each .This will help the masala to be evenly coated on the soya chunks You can slice each soya chunks and then squeeze the water out.As told b4 you can repeat the process for 2-3 times. Add this Soya Chunks into a cooker Add 1/4 tsp of red chilli powder 2 pinch of turmeric powder Salt to taste. Mix it well with your hands. Add 1/4th glass of water Now cook this on medium heat for 1 whistle. Do not wait for the pressure to be released. you can release the pressure manually Take a heavy bottomed pan add some oil Add 1 strand of curry leaves 1 tbsp of freshly crushed ginger and garlic .I have taken 3 big garlic pods and small ginger Saute till the raw smell goes Add sliced onions .I have taken 4 medium sized onions I have added 10 shallots too.(optional) Add some salt to the onion. Be careful with the salt as we have added some to the Soya Chunks as well Saute till the onions turn golden brown. If you have coconut pieces you can add that as well to this recipe. You can do this recipe and you will not find that raw smell of Soya Chunks anymore Add two green chillies Reduce the heat and then add the Masala Powders 1 tsp of Kashmiri Chilli powder 1/4 tsp red chilli powder 1 tsp of coriander powder 1/2 tsp garam masala powder Saute well When the raw smell goes, add 1 ripe tomato. Saute well and then close the lid and let it cook Stir ocassionally Saute and cook till the oil clears to the top you can see that the tomatoes have blend well and the oil has started to clear out on the top. Now you can add the cooked Soya Chunks Mix well and Roast it till your desired consistency Check the salt and adjust accordingly I am not adding more water. if you want to roast it till it turns dark then add some more oil and roast it This is ready to serve now as well, if you desire to roast it this much. If you want gravy just add some more water and boil it well. this is the basic recipe and we can bring it to our desired form . Soya Chunks will take some to be roasted as it is like a sponge and absorb a lot of water. So to release that water and get roasted it will take some time. if you feel the masala is not evenly coated it is because of this water content.Just follow the initial process i have mentioned you will get perfect Soya Chunks roasted Taste the dish and make the changes to the spices according to your preference if you do not have Kashmiri Chilli powder you can add pepper .This will also make the roast look really dark Add some freshly crushed black pepper Add lot of curry leaves This is my desired form of the roast . So taste one Soya and see if the water content is not there. Remove it to the serving plate !! Hope all liked the dish. Do share and Like the recipe!!!
