Hi everyone, I have a lot of eggplants in my backyard; so I decided to make Stir Fried Eggplant with Tofu. So let’s get started. We begin to cut eggplants into diagonal. Then place it into a water bowl, and remember to squeeze a few drops of lime juice into the water bowl to prevent our eggplants from turning black. Cut green onions into 2 inches long. Smash garlic gloves and mince well. Now we cut tofu into bite-sized pieces. And deep fry for three or four minutes on each side, or until golden brown. Then remove the tofu from oil and place on a paper towel and set aside. In a bowl, add 3 tablespoons of sugar, quarter tablespoon of salt, 1 tablespoon of mushroom seasoning, and it’s just optional, 3 tablespoons of soy sauce, 2 tablespoons of hoisin sauce, half tablespoon of ground pepper, and 3 tablespoons of waters. And stir well until the sugar dissolved, and set aside. Heat 1 tablespoon of oil in a saucepan on medium high heat. Add garlic and sautee until fragrant. Then add fried tofu and stir fry for 1 minute. Now we add eggplants. Cook and stir fry for another 1 minute. Then pour in the sauce. Mix the up. Cover and cook for 4 or 5 minutes or until soft. And remember to stir them up every 2 minutes. Finally, we add green onions, mix the up, and remove from heat. Transfer on a dish sprinkle with ground pepper and deco with cilantro.
