These Wicklow brewers are raising the bar… Literally!


Wicklow is the most beautiful county in Ireland
it’s part of the Ireland’s Ancient East it has everything within the county, going
from North Wicklow to South Wicklow you’ve got the beautiful Wicklow Mountains
you’ve fantastic farmland to the south you’ve got beaches the whole way along the
coast good towns for recreation and fun
it has everything that you could need in one county
the most scenic place in county Wicklow is on top of Glendalough
Wicklow is central and vital to everything we do here
beer is made from four simple ingredients malted barley, water, hops and yeast
and we’re very lucky here in Ireland’s Ancient East in county Wicklow
in that we have the best of all four of those here
we have our own hops we have wonderful water
we grow some of the best malted barley in the world
and then, obviously, we use our own strain of yeast
we make sure that everything that goes into that beer is completely local
my business partner, Simon had bought a small farm up close to Roundwood, it’s a beautiful
location beautiful site looking over Roundwood Lake
and it was absolutely ideal for growing hops they climb up a rope, until they get to their
full height and they ripen up by the end of September,
early October and we have a big party up on the farm and
people come from all over to pick the hops and drink beer and play music and have some fun we now have our own beehives
eight of them you know, there’s an abundance of wild flowers,
wild heathrose, heather on, on, on top of Djouce Mountain
which is just behind us here so, you know, it is bountiful terrain
for bees to go out and forage for nectar we recently used the honey in a collaboration
beer that we did with a Danish brewery and that’s Wolf Kiss
well, one of my favourite spots is actually not too far from here, it’s a couple of hundred
metres down the street the Harbour Bar here in Bray
it has something for everybody in it it’s an old traditional bar, that would have
traditional music at one end of it and a few old men playing cards somewhere else and a rock band out the back for the younger people it’s a really really cool spot there’s lots of fantastic places to eat here
in County Wicklow one of my favourites would be Cowfish
which is again down on the seafront with beautiful views across the Irish Sea and they do a wonderful
range of different fish dishes and beef dishes really interesting food and they do something
a little bit different you know, it’s really important that we have
the brewery here in Bray because it’s kind of the in between part between the sea and
the mountains the people of Bray are really proud of having
their own beer they regard Wicklow Wolf as their beer
and we regard the people of Bray as our people
