What’s Cooking: Batido & Parfait


Hi, I’m Chef Amy. Today I’m going to show
you some quick ideas for healthy breakfasts or snacks using low-fat yogurt and a variety of
fruit. These dishes are packed with calcium, protein, and nutrients, and they taste great,
too. First, let’s make our smoothie. I’m going to start by adding 2 cups of fresh papaya
chunks into my blender. I’m using fresh but frozen is a great option as well. You could
also use fresh or frozen, no sugar added, strawberries, blueberries, raspberries, or
whatever else is in season in your local farmer’s market instead of or in addition to the papaya.
Next, I’m going to add 2 very ripe bananas and a cup of plain, low-fat yogurt, and a
cup of ice. We’ll blend these for 30 seconds or up to a minute. Just puree it until smooth.
So here we have our smooth and creamy breakfast smoothie to enjoy right away. Cheers. Now,
with some of the same ingredients, I’m going to go ahead and make a delicious breakfast
parfait. I’m going to start by layering in some fresh pineapple chunks. You can also
use frozen or canned if you like. Then on top of those, I’ll scatter some fresh strawberries
and blueberries. Keep in mind that you can also use frozen and blackberries and raspberries
are delicious as well. Then on top, I’ll spread about a cup of low-fat french vanilla yogurt.
I’ll top that with a sliced, ripe banana and sprinkle some raisins on top. So there you
have it. Two quick, healthy, and delicious ideas to get you out the door each morning
