Namaskar! Welcome to Nishamadhulika.com. Today we will prepare salty wheat mathri. They are too tasty. Those who do not like plain flour mathri will definitely like wheat mathri. You can have it for breakfast or evening snacks or whenever you feel like having it. So let’s start preparing salty wheat mathri. Wheat flour – 1 cup. Semolina – 1/4 cup. Oil – 1/4 cup. We will use it for kneading the dough. Oil for frying mathri. Salt – 1/3 tsp or salt to taste. Carom seeds – 1/3 tsp. Cumin – 1/2 tsp. Coarsely ground Black pepper powder – 1/3 tsp. Coarsely grind around 10-12 black pepper. To prepare mathri we will knead the dough. In a bowl take dough and semolina. Add crushed carom seeds and cumin seeds, black pepper powder, salt and oil. Mix all the ingredients. Knead the dough by slightly adding water in small quantities. The dough must be slightly harder than the dough for pooris. While preparing dough we used oil, we can also use clarified butter. Dough is ready and it took less than 1/4 cup of water to prepare it. Cover the dough and keep aside for 15-20 mins. The dough will be set by then and we will prepare mathri. After 15 mins the dough is ready. Now slightly press the dough to make it soft. If the dough becomes too hard then you can add water and knead it again. Dough is ready, now make small balls of dough and keep aside. You can make 15-16 balls from the dough. Heat oil in a pan and meanwhile roll the dough. Roll the dough thickly with a diameter of 2 inches. Make holes 4-5 times in the mathri using fork on both the sides. Check the oil whether it’s hot or not by putting a small piece of dough. The oil is ready, do not overheat the oil. The oil must be medium hot and cook the mathri in low-medium flame. Fry the mathri in oil and when they turn brown from one side, flip it. Fry the mathri until golden brown. Transfer them on a plate. Fry all the mathri likewise. Salty wheat mathri is finally ready.
