Where the Chef at Chicago’s Best Pizza Spot Eat | Chicago Chefs Pick Their Favorite Dishes


I like things that are simple
and straightforward. I really enjoy a well-made sandwich. Hi my name is Jess Galli, and I’m the head baker at
Bungalow by Middle Brow. Bungalow is a brewery, a
restaurant, and a bakery. It is a house of wild fermentation. The elements that
I like in any dish is that it’s just made well
and that it’s balanced. I like things that are simple
and straightforward It can eat peanut butter and jelly
sandwich or it can be a souffle, although I can’t even remember
last time I had a souffle. Technique aside, I like
food that’s made well, and it’s made with intention. My favorite breakfast here
in Chicago is at Spinning J When I first moved to Chicago, I moved to
Humboldt Park, and lived just around the corner. So in the morning time,
I would walk over and treat myself to a blueberry scone and a cup of coffee. On the weekends, if I’m there, I love
to get their cheese and egg sandwich. it’s on a house-made English
muffin that’s rich and flavorful. It almost feels like it’s
just like a brioche. And it’s both simple and satisfying. If I’ve had a particularly long night
and I’m feeling extra indulgent. I will also get a chocolate egg
cream to pair along with it. For lunch, I love to go to Cafe Mustache. They have a rotation of
weekly special sandwiches that are always
affordable and delicious. I like the sandwich specials there because
I really enjoy a well-made sandwich. They’re always trying to challenge themselves and always having fun while doing it. And more than anything I just
love the atmosphere there. Feels very comfortable. You can come in do work,
and then stay until later hours of the night when the cafe turns into more of a
venue bar environment. My favorite dinner right now is Ghin Khao Eat Rice. It is a Thai spot that is owned and
operated by a brother and sister pair. My favorite dishes to get there
are definitely the crab fried rice. A lot of real pieces
of tender crabmeat. Along with it, grandma’s pork belly. It’s thin slices of pork
belly that our paper fried and come with a very
flavorful kind of spicy sauce. It’s also BYOB so you can bring
whatever drinks you’d like. The menu itself
is pretty small so it’s hard to go wrong with
whatever it is that you want to get.
